What is Claypot Chicken Rice?
Claypot Chicken Rice is a classic Cantonese dish often enjoyed in the winter.
The dish is a “rice casserole” and a traditional dinner dish in Malaysia.
Chinese-style Claypot Rice features Chinese sausage, cured pork belly, and a layer of crispy rice at the bottom!
The name refers to how the dish is prepared: rice, meat, and vegetables are cooked in a heated Claypot.
The rice is presoaked and cooked in the clay pot with soy sauce, marinated Bone-in Chicken, and sliced Chinese Sausages.
Fried salted fish is added to the rice to add that unmistakable Unami flavor.
It is finished off with a sprinkle of Chinese cooking wine, a garnish of spring onions, and an egg that you stir in before eating.
The aroma of burnt rice, soy sauce, and Chinese cooking wine, with an egg added for extra creaminess, is divine.
