Going to the Guinness Flavour by Fire Festival was an extraordinary culinary adventure that ignited my taste buds.
The festival turned Fort Cornwallis into a lux fairground with the sizzle and smoky flavors of Guinness-infused flame-cooked meats, live music, friendly camaraderie, games, and memorable moments.

Guinness Stout
Guinness (/ˈɡɪnəs/) is an iconic Irish dry stout with its roots tracing back to 1759 when Arthur Guinness established his brewery at St. James’s Gate, Dublin, Ireland.
Renowned for its rich history and exceptional quality, Guinness has become one of the world’s most successful alcohol brands.
It is proudly brewed in nearly 50 countries and enjoyed by Guinness fans in over 120 nations.
Why Use Guinness?
Guinness has been a pioneer in embracing the culinary phenomenon.
What differentiates Guinness is its extraordinary brewing process involving barley fire-roasting at a blistering 232 degrees Celsius.
This meticulous craftsmanship results in a beer that boasts a distinctive and unparalleled taste.

Kitchen Mafia
The renowned rock & roll celebrity chefs Johnny Fua and Sherson Lian, who have gained fame through their association with Guinness Flavour By Fire, stole the spotlight at the festival.
They brought an enticing menu, headlined by the mouthwatering Guinness Sticky Lamb Ribs and other delightful surprises!
I’ve been a fan since watching Chef Sherson Lian cook with his mother, Ann, on the Asian Food Channel (AFC), and I’ve always yearned to sample his cuisine.
When I saw the Salmon fillets and whole pineapple suspended over the smoldering coals, I knew I was in for a real treat!
Sinking my teeth into their mouthwatering Guinness Sticky Lamb Ribs was a sensation, with charred, smoky, sweet notes reminiscent of the finest Char Siu.
Guinness Sticky Lamb Ribs is a must-order crowd-pleaser.
We loved the experience, that we couldn’t resist ordering two other standout dishes that were equally delicious.
The Caveman Salmon was a perfectly smoked masterpiece with dense, flavorful flesh that was torched just before serving. It paired exquisitely with the rice, requiring no additional condiments—the seasoning was spot on.
Garnished with crushed peanuts, the Grilled Pineapple with Guinness Ice Cream undeniably stole the show as the festival’s finest dessert.
Our friend Jeni couldn’t stop raving about the pineapple as we walked in, saying, “Dory, you must try this; it’s incredibly good!”
We ended up ordering two sets—it was that irresistible.
KAO BBQ
Open-flame grilled Satay meat skewers have always been my go-to, and adding some Asian-inspired flavors was a delightful twist.
I opted for their renowned KAO Lamb Skewers, the KAO Pork Skewers skillfully infused with Guinness’s unique essence and three vibrant KAO Taiwanese Sausages.
These meat skewers are hot and incredibly flavorful, solidifying their well-deserved reputation as nothing short of legendary.
Penang Chef Stalls
The Penang Chefs did an exceptional job cooking up a storm with equally long lines in the queues.
We just wished we had more time and stomach space to order more of their delicious food to taste.
Roku the Taco Bar
Roku Penang serves visually captivating Tacos in two unique presentations: Nori (Japanese Seaweed) and the classic Taco Tortilla. It’s worth a visit, especially if you’re searching for something extraordinary.
We opted for the Nori Salmon Taco despite the lengthy queues and minor hiccups with their rice preparation – we were glad we tried it. The Nori Shell, in particular, was incredibly delicious!
SmokePapa BBQ
Smoke Papa is an absolute must-try if you’re a fan of savoring Texas BBQ with a Penang twist.
The owners, Hong and his wife Jen, are warm and welcoming individuals who share a deep passion for crafting the finest BBQ and smoked meats.
SmokePapa holds a special place in my heart.
I remember its humble beginnings at a Food Court on Weld Quay.
I can’t wait to visit their restaurant on Bishop Street, where I can enjoy their delectable offerings in air-conditioned comfort.
Three Tiers Ice Cream
We tried their creamy Guinness-infused ice cream very delicious and lovely.
Flavour by Fire Festival Review
A must-go event if you enjoy good stout and flame-grilled meats!
SmartDory and friends only wished they had more stomach space to try all the delicious food.
We never knew that Guinness-infused food tasted so good, and then remember the Guinness Stout Chicken at local Chu Char restaurants.
