Best dunked in black kopi-O, Longest You Tiao (Chinese Cruller) is found in Paya Terubong, Penang.
This favourite Asian Chinese breakfast staple called Yau Char Kwai in Hokkien which translated; sounds like deep-fried devils.
The Malays call this doughy cake Cakoi. The texture is crispy on the outside, and soft, slightly chewy inside which looks like a honeycomb.
This simple snack goes extremely well when paired with plain porridge. You can even dunk it into smooth almond tea, soya bean milk. Most of us love it in hot Bak-kut-the soup.
It is made with flour, baking soda (and some say alum. Ammonia) the sticky dough is rested before the final rolling out and cutting into strips. The long dough strip is typically made in a pair and deep fried until golden brown.
The Long and Short of You Tiao
The same recipe with a little variation is made in different lengths. In Malaysia, these Chinese crullers are about a foot long. Te Chang You Tiao Wang Enterprise in Paya Terubong, Penang makes it about 15” long.
However those You Tiao we found on our food hunts in Taiwan are nothing short of supersized! These You Tiao are very light, not oily and delightfully crispy. When chewed on and it makes a great snack. It tasted delicious in the homemade mildly sweet soya milk. For variations, it’s now being turned into a croissant like a snack with fillings of tuna, coleslaw, and even meat floss.
I find that diehard fans will devour these You Tiao in its original form; right off the fire!
